Gnocchi, chorizo, and mozzarella are added to gooey tomato pasta to create a warm bake that is a great midweek supper.

Ingredients

1 tablespoon of olive oil

1 onion, chopped finely

2 smashed garlic cloves

120g of chopped chorizo

400g cans of chopped tomatoes in twos

caster sugar, 1 teaspoon

600g of new gnocchi

125g of mozzarella sliced into pieces

tiny, ripped bunch of basil

To be served: a green salad


Method

STEP 1

Over medium heat, warm the oil in a medium pan. Until tender, fry the onion and garlic for 8 to 10 minutes. Chorizo is then added, and the cooking time is increased by 5 minutes. Add the sugar and tomatoes, then season. Add the gnocchi and cook for 8 minutes, frequently stirring, until soft. Bring to a simmer. the grill is really hot.

STEP 2 

Mix the gnocchi with the majority of the basil and 3/4 of the mozzarella. The mixture can be divided among six baking dishes or oven-safe ramekins. Add the remaining mozzarella on top, then grill it for 3 minutes, or until it is melted and brown. Serve with a green salad after seasoning and adding the remaining basil.
