Ingredients

Two skinless, boneless chicken breasts, sliced in half horizontally (or 4 cutlets)

1 teaspoon of salt

Ground black pepper, half a teaspoon

All-purpose flour, 1/3 cup

Garlic powder, 2 teaspoons

Lightly beaten, two big eggs

Panko breadcrumbs, half a cup

a half-cup of grated parmesan cheese + additional for garnish

Italian seasoning, 1 tablespoon

frying-pan nonstick coating

Marinara sauce, 1 cup

4 pieces of mozzarella (about 4 oz.)

garnished with fresh basil


Directions

Step 1

Salt and pepper the chicken pieces on both sides. Place aside. 

Step 2

In a small bowl, combine the flour and garlic powder. To a second shallow bowl, add the eggs. Stir the panko, parmesan, and Italian seasoning in a third shallow bowl.

Step 3

One piece of chicken at a time, coat it in flour, then in egg, and finally in panko mixture, pressing as necessary. Continue until every piece of chicken has been breaded. On all sides, use nonstick cooking spray to coat the breaded chicken.

Step 4

In the air fryer basket, arrange the chicken pieces in a single layer with a 1/2-inch gap between each one. Cook for 6 minutes in an air fryer set to 375°. Then turn it over and cook for a further six minutes.s

Step 5

Toss roughly 2 tablespoons of marinara onto each piece of chicken in the air fryer basket. Add one slice of mozzarella to each. Return to the air fryer and cook for another three minutes, or until the cheese is bubbling and golden brown. Add freshly chopped basil as a garnish.


For this dish, store-bought, finely grated Parmesan cheese works best; it must be light and powdery to adhere to the chicken cutlets.
