We love rotisserie chicken, and now with a pressure cooker, I can have it ready to eat in an hour or so. I combined several recipes to come up with this favorite. If you are new to the kitchen tool, this is a perfect recipe to begin with since it is so easy. —Joan Hallford, North Richland Hills, Texas

Ingredients

two teaspoons of dried thyme
2 teaspoons crushed dry rosemary
Rub two tablespoons of sage
1 kosher salt tablespoon
a teaspoon of pepper
1 optional small lemon, quartered
1 small onion, optionally quartered
3 crushed garlic cloves, as desiredOne bird, broiler or fryer (3 to 4 pounds)divided two tablespoons of olive oil1 cup of water or chicken broth
Directions

  1. Assemble the first five ingredients in a small bowl. If desired, place a lemon, an onion, and a clove of garlic inside the chicken. Brush with 1 tablespoon oil and sprinkle with herb mixture.
  2. A 6-qt. electric pressure cooker should be set to the saute setting. Add the final 1 tablespoon of oil after adjusting for medium heat. Cook chicken for 4-5 minutes, breast side down, in heated oil, until browned. Remove the chicken and click cancel. In a pressure cooker, put a trivet insert and some broth. Set the chicken on the trivet. Close the pressure-release valve and lock the lid. Adapt to pressure-cook for 25 minutes on high. Permit the pressure to drop naturally.
